Oh, and you don't need a fancy pan. Anything that's not going to catch fire works.

1) The pan's purpose is to control the ash (easy cleanup) and keep things from catching on fire. On a grill, it's not such a problem. 2) To light the charcoal, I use a charcoal chimney. $19 for a big fancy one that you can also cook on with a cast iron pan w/o the legs. 3) Get a lid lifter with the three legs and a hook operated by squeezing the handle. Zero ash in food. Best wishes with your dutch oven!

I lay potatoes (and other veggies) on the bottom of the dutch oven and cook the meat on top.

Hey Dave! Great video, beautiful place and cute dog (go Steve!)! I just bought my first dutch oven today and your recipe looks simple and great, so thank you. You will have to let us know when you end up on our end of the USA, maybe we can figure out how to steam Tamales in the Dutch!

Dave, great video! Question: Can I use my grill like you did for your pot roast if it's gas? When using charcoal I would rather cook up high than down at ground level. I'm not as young as I used to be!! :-)
